If you are a pancake lover looking for a healthier option, please give these Healthy Greek Yogurt Pancakes a try. They are fluffy and moist. Packed with protein & refined-sugar-free.
INGREDIENTS
90 g oat flour (or old-fashioned oats blended)
30 g all-purpose flour
1 scoop vanilla protein powder
1 tsp baking powder
½ tsp baking soda
½ tsp fine sea salt
200 g Greek yogurt
1 tsp vanilla extract
2 eggs
15 ml oat milk (if needed)
Olive oil (for greasing the pan)
TOPPINGS
Peanut butter
Blueberries
Honey or Maple syrup
METHOD
In a large bowl mix together all of the wet ingredients such as the greek yogurt, eggs and vanilla. Whisk until mixture is smooth.
In a separate bowl, mix together oat flour, all-purpose flour, baking powder, baking soda, salt Whisk until completely combined.
Add the wet ingredients to the dry ingredients. Whisk until mixture is smooth ( If the batter is too thick, add milk 1 tbsp at a time until it reaches your desired consistency)
Grease a pan with olive oil. Pour 2 tbsp of pancake batter onto the pan. Cook until bubbles start forming in the mix and the sides become set (about 2-4 minutes). Flip and cook for 2-4 minutes on the second side, or until golden brown
Enjoy warm with some peanut butter and fresh blueberries.
