Healthy Greek Yogurt Pancakes

If you are a pancake lover looking for a healthier option, please give these Healthy Greek Yogurt Pancakes a try. They are fluffy and moist. Packed with protein & refined-sugar-free.


Pancakes with berries

INGREDIENTS

  • 90 g oat flour (or old-fashioned oats blended)

  • 30 g all-purpose flour

  • 1 scoop vanilla protein powder

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp fine sea salt

  • 200 g Greek yogurt

  • 1 tsp vanilla extract

  • 2 eggs

  • 15 ml oat milk (if needed)

  • Olive oil (for greasing the pan)


TOPPINGS

  • Peanut butter

  • Blueberries

  • Honey or Maple syrup



METHOD

  1. In a large bowl mix together all of the wet ingredients such as the greek yogurt, eggs and vanilla. Whisk until mixture is smooth.

  2. In a separate bowl, mix together oat flour, all-purpose flour, baking powder, baking soda, salt Whisk until completely combined.

  3. Add the wet ingredients to the dry ingredients. Whisk until mixture is smooth ( If the batter is too thick, add milk 1 tbsp at a time until it reaches your desired consistency)

  4. Grease a pan with olive oil. Pour 2 tbsp of pancake batter onto the pan. Cook until bubbles start forming in the mix and the sides become set (about 2-4 minutes). Flip and cook for 2-4 minutes on the second side, or until golden brown

  5. Enjoy warm with some peanut butter and fresh blueberries.
